Poultry

Sun-dried Tomato & Basil Sausage Risotto
A rich, creamy risotto of sautéed chicken sausage, mushrooms and onions, cooked in chicken stock and finished with shredded parmesan and basil.

Five Spice Orange Chicken
Boneless, skinless chicken breast, tossed in Chinese Five-Spice seasoning and pan seared then oven baked. The breasts are sliced and topped with a tangy orange sauce. Try this chicken dish with mashed sweet potatoes with coconut milk and ginger, a good combination.

Chicken & Sweet Potato Stew
This is a slow cooker dish! Bone-in chicken thighs, skin removed, trimmed of fat, with sweet potatoes, button mushrooms, shallots, with a touch of white wine and fresh rosemary all slow cooked and ready to eat when you come home!

Cassoulet-Style Chicken
A version of a classic French country dish, with chicken breast, white beans, turkey kielbasa sausage, rosemary, thyme and garlic. The ingredients are slow cooked on the stove top then topped with freshly toasted seasoned bread crumbs before serving.

 

Beef

Cheeseburger Meatloaf
This is a Paula Dean recipe, THE southern cook! Ground beef, onion, bell pepper, cheddar cheese and Worcestershire sauce are all combined, seasoned and baked to produce this meatloaf, packed with flavor. To finish it off, the sliced meatloaf is topped with a home-made cheese sauce.

Sautéed Beef with Vegetables
A popular Korean dish, of marinated rib eye steak, cut into strips and sautéed at a high heat. Cooked in the same pan with the remains of the marinade are zucchini, shiitake mushrooms and scallions, then finished with some sesame oil and toasted sesame seeds. Great with seasoned brown rice.

Asian "Salisbury" Steak
The original Salisbury steak was named after a 19 century doctor. This version has Asian flavors from Hoisin sauce, ginger and rice vinegar. The lean ground beef is seasoned, and shaped into "Steaks" then broiled and finished with an Asian sauce.

 

Pork

Pork with Cider Pan Sauce
Thick boneless pork loin chops are pan seared until lightly browned then finished cooking in the oven. The cider pan sauce consists of chopped dried plums, apple cider, cider vinegar, fresh thyme, onion and garlic, all reduced to a light sauce and server over the cooked pork chops.

 

Seafood

Bronzed Tilapia
Tilapia is a mild white fish, sweet and fine textured. Also known as St. Peter's fish and in Hawaii as Hawaiian Sun Fish. These fillets are coated with a homemade seasoning mix and pan cooked over high heat until "bronzed" and will flake easily.

Salmon & Spinach Cannelloni
Rolls of stuffed pasta filled with a mixture of spinach, ricotta cheese and poached salmon and laced with a rich tomato-cream sauce! Need I say more?

Savannah Seafood Parmesan
Medium Shrimp cooked in sauce of clam juice, white wine, fish stock and half & half. Then added to that some lump crab meat, parmesan cheese, diced pimento and thyme. The seafood mixture is then tossed with bow-tie pasta, topped with some grated parmesan cheese and baked until golden! Very rich, but hits the spot on a dark winter evening when you want a taste of the sea-side.
(That's my excuse!)

Swordfish with Lime-Ginger Glaze
Swordfish steaks, marinated in fresh lime juice, honey, soy sauce and fresh ginger. Broiled, and brushed with a glaze made with the marinade.

 

Hearty Soups

Hearty Vegetable Soup
This soup will knock the chill out of any evening, chock full of lima beans, carrots, onion, green beans, garlic, peas, navy beans, diced tomatoes in a vegetable stock, with a touch of heat from chipotle pepper.

Baked Potato and Broccoli Soup
Thick and creamy but lower in fat than the traditional version. Top each serving with sour cream, cheese and green onions for added flavor.

Creamy Red Pepper Soup
Roasted red pepper, onion, carrots, russet potatoes, slow cooked in chicken stock then puree until well blended and smooth. When serving up, add a dollop of sour cream if you'd like.

 

Vegetarian

Polenta & Vegetable Bake
This comforting vegetarian casserole is perfect on a cool night, healthy too! Eggplant, zucchini, baby spinach are cooked in a tomato sauce, then laid over a layer of polenta and topped with mozzarella cheese and baked. Good with some warm crusty bread.

Mediterranean Pasta with Zucchini
An unusual combination of zucchini, chickpeas, sliced black and green olives and diced tomato, seasoned with fresh basil, oregano and garlic, combined and served over whole wheat penne paste. Then topped with feta cheese. Great flavor!

Tex-Mex Ravioli Casserole
Cheese ravioli layered with corn, black beans, and a salsa/tomato sauce mix, then topped with mix of shredded sharp cheddar cheese and shredded Monterey Jack cheese and bakes. This dish pairs two things everyone enjoys-casseroles and pasta!
